About this position

Confidential Japanese restaurant group is hiring an experienced Sushi Chef for an immediate start. Annual salary: $100,000. This fast-paced role combines omakase service with à la carte sushi and rolls. The chef must move comfortably between guest-facing omakase service, à la carte production, and hands-on preparation as service needs change.

What you’ll do
• Prepare and present an omakase menu with careful technique, pacing, consistency, and guest engagement.
• Prepare à la carte sushi, nigiri, sashimi, and rolls to recipe and presentation standards.
• Butcher and portion fish; prepare sushi rice, garnishes, sauces, and other mise en place.
• Shift between omakase, à la carte, and prep responsibilities during service as needed.
• Keep the sushi station clean, organized, stocked, and ready through busy service.
• Follow receiving, labeling, storage, rotation, sanitation, and food-safety procedures.
• Support opening, closing, inventory, and coordination with the culinary and service teams.

What we’re looking for
• Professional sushi experience in a Japanese restaurant, including omakase and à la carte service.
• Strong fish butchery, knife, sushi-rice, and sushi preparation skills.
• Ability to deliver polished omakase while also preparing rolls and other menu items efficiently.
• Flexibility to move between guest-facing service, à la carte production, and prep duties.
• High standards for food safety, cleanliness, consistency, and hospitality.
• Reliability, teamwork, and composure in a fast-paced kitchen.

Please apply with your résumé and a brief note about your sushi experience, including omakase and à la carte work. Work location: in person.
