hacco is seeking two skilled, curious, and highly motivated Cooks to join our culinary team as part of our opening team in Williamsburg, Brooklyn.
hacco is a new bakery café concept centered around koji — the fermentation culture at the heart of Japanese food traditions. Through bread, pastry, coffee, sandwiches, and culinary creations, we are exploring how koji can bring new depth, flavor, texture, and possibility to contemporary food.
As a Cook at hacco, you will be part of the team responsible for preparing and executing our savory offerings, with a particular focus on our premium sandwich program and related culinary production.
This is a hands-on role where precision matters. Our savory products are approached with the same attention to ingredients, balance, detail, and presentation that we bring to our bakery and pastry programs.
hacco is also a highly collaborative environment. While culinary production will be your primary responsibility, you may occasionally support other areas of production and work closely across bakery, pastry, beverage, and front-of-house teams.
As part of an opening team, we are looking for people who are proactive, flexible, open-minded, and excited to help build new systems and ways of working from the ground up.
What You’ll Do
- Prepare mise en place and ingredients for hacco’s sandwich and savory programs.
- Prepare, cook, finish, and assemble savory products according to established recipes, quality standards, and presentation guidelines.
- Execute premium sandwiches with close attention to flavor, texture, portioning, consistency, and presentation.
- Handle high-quality ingredients carefully and maintain proper storage, labeling, rotation, and organization.
- Maintain an organized and efficient workstation and support daily production and prep.
- Work collaboratively with the culinary team and communicate clearly about production needs, quality, and workflow.
- Collaborate with bakery, pastry, beverage, and front-of-house teams as needed.
- Support other areas of production when appropriate and be open to learning skills beyond your primary station.
- Maintain exceptionally high standards of cleanliness, sanitation, organization, and food safety.
- Identify problems proactively and work with the team to find practical solutions.
- Adapt to evolving responsibilities and workflows during pre-opening and the early stages of operation.
- When working in guest-visible or guest-facing areas, interact with customers professionally and warmly and maintain a polished, professional presence.
What We’re Looking For
- 1+ year of professional culinary, restaurant, bakery, or relevant food-production experience preferred.
- Strong fundamentals in food preparation, mise en place, knife skills, organization, and food safety.
- Experience working with quality ingredients and producing food where consistency, precision, and presentation matter.
- Strong attention to detail and pride in clean, precise execution.
- Clean, organized, and disciplined working habits.
- Initiative and the ability to recognize what needs to be done without always waiting for direction.
- Flexibility and willingness to contribute beyond a narrowly defined role when the team needs support.
- Strong communication skills and comfort working with people from different professional and cultural backgrounds.
- Openness to feedback, learning, experimentation, and continuous improvement.
- Curiosity about fermentation, koji, ingredients, and new approaches to food. Prior professional experience with koji is not required.
