The Maître d’ is a senior Front of House position and a key leader of the Quello guest experience.
This person owns the front door, reservation book, seating strategy, guest recognition, and overall flow of the dining room in partnership with the Director of Guest Relations and FOH leadership.
The ideal candidate understands that managing the door at a high-level restaurant requires more than knowing where to seat a table. It requires reading the room, understanding pacing, anticipating challenges before they happen, recognizing guests, protecting the reservation book, and making thoughtful decisions that balance hospitality with the needs of the business.
The Maître d’ should be highly visible, confident, composed, and genuinely enjoy building relationships with guests.
ResponsibilitiesLead the front door and arrival experience during service
Manage the reservation book and oversee daily seating strategy
Review reservations before each service and identify VIPs, regulars, special occasions, preferences, potential challenges, and opportunities to personalize the experience
Strategically manage table assignments, pacing, turns, walk-ins, waitlists, and last-minute reservation changes
Work closely with the General Manager and service leadership to maintain the appropriate flow of guests into the dining room
Make thoughtful decisions regarding reservation requests and accommodations while protecting the guest experience and restaurant operations
Build genuine relationships with regulars and become a recognizable presence within the restaurant and Greenwich community
Maintain detailed, relevant guest profiles and ensure important information is captured and communicated appropriately
Oversee and develop the Host team, including training, standards, reservation procedures, phone etiquette, and guest recognition
Ensure the Host team is prepared before every service with accurate reservation information and a clear seating plan
Handle sensitive guest situations, reservation challenges, and recovery opportunities with discretion and confidence
Coordinate VIP and special guest arrivals with FOH leadership
Maintain communication with the dining room throughout service and adjust the seating plan based on actual pacing
Support the service team by remaining aware of what is happening throughout the restaurant, not only at the front door
Maintain strong knowledge of Quello's food, wine, beverage, private dining, and overall guest offerings
Help establish and maintain Quello's standards for guest recognition and reservation notes in SevenRooms
Ensure every guest receives a warm farewell and identify opportunities to invite guests back
Serve as an ambassador for Quello and help build long-term relationships with our guests and community
Significant experience in a high-level restaurant, luxury hospitality, or comparable guest-facing environment
Previous Maître d’, Lead Host, Guest Relations, or senior front-door experience strongly preferred
Exceptional understanding of reservation management and dining room pacing
Strong working knowledge of SevenRooms or comparable reservation platforms
Natural ability to remember names, faces, preferences, and guest details
Excellent judgment and the ability to make confident decisions during service
Warm, sophisticated communication style
Calm and composed when managing demanding situations
Strong leadership skills and ability to train and develop a Host team
Understanding of the business behind the reservation book, including maximizing seating while protecting the guest experience
Discretion when working with VIPs and high-profile guests
Genuine interest in becoming part of the Greenwich community and developing long-term guest relationships
At Quello, the guest experience begins before anyone sits down.
We believe the best hospitality professionals anticipate rather than react, guide rather than simply accommodate, and create genuine relationships rather than transactional interactions.
A guest should feel recognized without feeling managed, cared for without feeling hovered over, and welcomed whether it is their first visit or their fiftieth.
The front door is where that relationship begins.
We are looking for Hosts who want to learn the art of hospitality and a Maître d’ who understands how powerful that role can be in building a great restaurant.
