Certified Dietary Manager – Position Summary

The Certified Dietary Manager (CDM) oversees dietary operations within the Health Center to help ensure residents receive nutritious, high-quality meals that meet their individual needs and applicable regulatory standards. The CDM is responsible for supporting menu planning, food preparation standards, sanitation, staff training, dietary compliance, and maintenance of a survey-ready environment.


This position works closely with nursing, therapy, culinary staff, residents, and families to support resident care and satisfaction through effective dietary management. Responsibilities include reviewing resident diet information, addressing dietary requests and changes, identifying nutritional risk areas, supporting appropriate dietary interventions, and helping ensure prescribed diets and textures are followed correctly.


The CDM meets with new admissions to identify food preferences, dislikes, dietary needs, and potential nutritional concerns. The position also completes appropriate MDS sections, CAAs, and care plans, follows up with residents and family members regarding dietary concerns, makes recommendations to physicians regarding nutritional interventions, and collaborates closely with Speech Therapy regarding altered diets and related interventions.


Operational responsibilities include monitoring food storage, preparation, service, sanitation, employee safety, and compliance with nutritional standards, government regulations, and organizational procedures. The CDM inspects food preparation and storage areas, monitors food quality and presentation, completes regular kitchen audits, and helps ensure the main kitchen and skilled nursing satellite kitchens remain compliant and survey-ready.


The CDM also provides leadership and supervision within Skilled Nursing dietary operations. Responsibilities may include interviewing, hiring, training, directing work, evaluating performance, recognizing employees, addressing performance concerns, and supporting a professional, accountable, resident-focused work environment.


Requirements and Qualifications

- Certified Dietary Manager credential required or ability to meet the certification requirements established for the position

- Experience in dietary services, foodservice management, senior living, skilled nursing, healthcare, or a related environment preferred

- Knowledge of nutritional standards, therapeutic diets, altered diets, food textures, resident preferences, and dietary interventions

- Experience reviewing resident diet information and coordinating dietary changes with residents and interdisciplinary team members

- Ability to identify residents who may be nutritionally at risk and support appropriate interventions

- Experience completing or contributing to MDS documentation, CAAs, and resident care plans

- Ability to collaborate effectively with nursing, therapy, physicians, residents, families, culinary staff, and other members of the interdisciplinary team

- Knowledge of food storage, preparation, service, sanitation, employee safety, and kitchen compliance standards

- Ability to ensure menus and departmental practices conform to nutritional standards, government regulations, and organizational procedures

- Experience conducting kitchen inspections and audits and maintaining a survey-ready dietary environment

- Ability to monitor food quality, appearance, preparation, storage, sanitation, and service standards

- Supervisory experience with the ability to interview, train, direct, coach, evaluate, and manage dietary staff

- Strong attention to detail and ability to follow established procedures, schedules, and resident-specific requirements

- Strong interpersonal skills with the ability to communicate in a polite, respectful, caring, calm, and compassionate manner

- Ability to maintain confidential information appropriately

- Strong written and verbal communication skills

- Ability to read and interpret safety rules, operating instructions, procedure manuals, and other job-related documents

- Ability to prepare routine reports, correspondence, records, and other documentation

- Basic mathematical skills including addition, subtraction, multiplication, division, fractions, and decimals

- Strong problem-solving skills and ability to apply sound judgment in standardized and changing situations

- Basic computer skills, including Microsoft Windows and internet-based systems

- Excellent organizational skills with the ability to manage multiple priorities and complete tasks accurately and on time

- Ability to take initiative, work independently, and use good judgment

- Must demonstrate a warm, positive, and professional approach when interacting with residents, employees, families, vendors, and visitors
