About this position

Join Celebrity Chef Charlie Palmer to open "The Pass" - a modern steakhouse and tavern at the heart of the Paso Robles Inn.

About The Pass

The Pass by Charlie Palmer is the new restaurant at the historic Paso Robles Inn, opening. Serving breakfast, lunch and dinner, The Pass offers modern, approachable cooking with the polish of fine dining. It joins Cattlemen's Bar and Salina Rooftop as part of the Inn's dining collaboration with Chef Charlie Palmer.

The Role

We are looking for servers who love food, wine and hospitality, and who take pride in knowing exactly what is on every plate. You will guide guests through the menu with confidence, take orders accurately, and deliver warm, attentive and well-paced service from the first coffee of the morning to the last glass of wine at dinner.

Responsibilities

Menu and product knowledge

  • Know all menus in full: every dish, its ingredients, preparation, sauces and garnishes, and where key ingredients come from.
  • Know the allergens and dietary details of every dish (gluten, dairy, nuts, shellfish, eggs, vegetarian, vegan). Never guess; confirm with the chef when unsure.
  • Learn daily specials, 86'd items and menu changes at every pre-shift lineup.
  • Know the wine list, cocktails, zero-proof drinks, coffee and tea program well enough to recommend pairings, with an emphasis on Paso Robles wines.

Guest service

  • Greet guests promptly and warmly and read each table to match the pace and style of service they want.
  • Attentively take orders based on a full understanding of the menu and its ingredients, describing dishes clearly and making thoughtful recommendations.
  • Enter orders accurately in the POS (Toast), including modifiers, allergies, seat numbers and coursing.
  • Time and fire courses with the kitchen so each course arrives at the right moment and per steps of service.
  • Present, open and pour wine tableside; provide coffee, tea and beverage service.
  • Follow The Pass steps of service: check back promptly, anticipate needs, clear and crumb tables, and reset between courses.
  • Handle guest concerns with care and bring in a manager quickly when needed.
  • Present checks and process payments, including room charges for hotel guests, following cash-handling policy.
  • Serve alcohol responsibly: check ID and follow Responsible Beverage Service practices.
  • Share hotel and local knowledge with guests, including Cattlemen's Bar, Salina Rooftop and Paso Robles recommendations.

Teamwork and standards

  • Attend pre-shift lineups and menu tastings.
  • Work as one team with hosts, bussers, runners, bartenders and the kitchen; run food and help wherever needed.
  • Complete opening, closing and side work: stocking stations, polishing glassware and silver, setting and resetting tables.
  • Keep the dining room clean and safe and follow food safety and sanitation standards.
  • Follow all hotel policies, safety procedures and emergency procedures.

Required Qualifications

  • At least 1 year of serving experience in a full-service restaurant.
  • Availability for breakfast, lunch and dinner shifts, including weekends and holidays.
  • At least 18 years of age.
  • California RBS certification within 60 days of hire and a California Food Handler Card within 30 days of hire.
  • Comfortable with a POS system, basic math and handling payments.
  • Clear, friendly communication with guests and team members.

Preferred Qualifications

  • 1+ years in upscale or fine dining.
  • Wine knowledge and familiarity with Paso Robles wines.
  • Hotel restaurant experience.
  • Toast POS experience.
  • Bilingual English/Spanish.

Physical Requirements

The minimum physical requirements include but are not limited to:

  • Lift and carry up to 40 pounds, including loaded trays and bus tubs.
  • Stand and walk for an entire shift, often 8 hours or more.
  • Bend, twist, reach, push, pull, stoop and kneel.
  • Hear, understand and communicate clearly in person and on the phone.
  • Work in a busy, fast-paced environment with variable hours.

What We Offer

  • Hourly pay plus gratuities.
  • Training with the Charlie Palmer Collective service and culinary team.
  • Room to grow across The Pass, Cattlemen's Bar and Salina Rooftop.
