Pastry Sous Chef — Job Description

hacco is seeking a skilled, detail-oriented, and highly collaborative Pastry Sous Chef to join our opening team in Williamsburg, Brooklyn.

hacco is a new bakery café concept centered around koji — the fermentation culture at the heart of Japanese food traditions. Through pastry, bread, coffee, and culinary creations, we are exploring how koji can bring new depth, flavor, texture, and possibility to contemporary food.

As a Pastry Sous Chef, you will work closely with our Head Pastry Chef and the broader bakery and culinary team to help establish the quality, consistency, and production standards of hacco’s pastry program from the very beginning.

This is a hands-on position. We are looking for someone who combines strong pastry technique and refined craftsmanship with the flexibility, initiative, and communication skills required of an opening team.

hacco is also a highly collaborative environment. While pastry will be your primary responsibility, you may occasionally work across departments and support other areas of production, including premium savory and sandwich preparation. We value people who are curious about food beyond the boundaries of their own station.

What You’ll Do

  • Work closely with the Head Pastry Chef to execute hacco’s pastry program and maintain consistently high standards of quality, flavor, and presentation.
  • Participate actively in daily pastry production, prep, finishing, assembly, and service-related preparation.
  • Execute refined, detail-oriented products where precision, consistency, and visual presentation are essential.
  • Help organize production, mise en place, workflow, and daily priorities for the pastry team.
  • Support the Head Pastry Chef in maintaining recipes, production standards, and quality-control procedures.
  • Help guide and support Pastry Cooks and other team members while contributing to a positive, collaborative working environment.
  • Identify production or quality issues proactively and work with the team to find practical solutions.
  • Collaborate across pastry, bakery, culinary, beverage, and front-of-house teams when needed.
  • Occasionally support cross-department production, including prep and assembly for premium savory and sandwich offerings.
  • Maintain an exceptionally clean, organized, and food-safe production environment and help reinforce strong sanitation standards within the team.
  • Adapt to evolving priorities, systems, and responsibilities during pre-opening and the early stages of operation.
  • When working in guest-visible or guest-facing areas, interact with customers professionally and warmly and maintain a polished, professional presence.

What We’re Looking For

  • 2+ years of professional pastry experience preferred, ideally in a high-quality, detail-oriented pastry, bakery, restaurant, or hospitality environment.
  • Strong pastry fundamentals and demonstrated craftsmanship, precision, and attention to detail.
  • Experience producing refined products where finishing, consistency, and presentation are important.
  • The ability to maintain high standards while working efficiently in a production environment.
  • Clean, organized, and disciplined working habits with a strong understanding of food safety and sanitation.
  • The ability to support and guide other team members while remaining hands-on in production.
  • Initiative and the ability to recognize what needs to be done without always waiting for direction.
  • Flexibility and willingness to contribute outside a narrowly defined role when the team needs support.
  • Strong communication skills and comfort working with people from different professional and cultural backgrounds.
  • Openness to feedback, collaboration, experimentation, and continuous improvement.
  • Curiosity about fermentation, koji, new ingredients, techniques, and cross-disciplinary food development.
  • A professional and welcoming approach to occasional guest interaction.
