About this position
Lucky Day is an upcoming neighborhood café and community space in Greenpoint, BK. In addition to breakfast, lunch, coffee, and matcha, the space will feature a carefully curated selection of retail pantry staples and everyday essentials. Additionally, Lucky Day will have plenty of kid- and adult-friendly events, gatherings, and programming!
We're looking for a creative emerging chef that is interested in helping Lucky Day develop and execute a simple, small, and craveable breakfast / lunch menu. The kind of food people in our neighborhood genuinely want to eat on a regular basis that can be executed beautifully in a very compact kitchen.
Our ideal candidate displays great taste and strong cooking fundamentals and is not fazed by the constraints of a compact Brooklyn kitchen and some menu guidelines. We want someone who can accomplish our early goals quickly and efficiently so they can help the establishment expand into exciting happy hour offerings, catering opportunities, and even weekly (or nightly!) elevated evening services that bend more toward fine dining.
Our kitchen currently accommodates a two-three person team, so the menu needs to be thoughtful, efficient, low-waste, and highly executable.
Responsibilities include:
- Collaborating with ownership on development of the opening menu
- Developing and standardizing recipes, prep methods, portions, and plating
- Designing the menu around ingredient cross-utilization, manageable prep, and fast pickup
- Leading day-to-day kitchen execution
- Training and working alongside the kitchen team
- Maintaining food quality and consistency
- Managing prep and production planning
- Working with director of operations on ordering, inventory, food cost, and loss control
- Maintaining strong sanitation and food-safety standards
- Evolving the menu thoughtfully based on seasonality, sales, and guest feedback
