About this position

Role Summary

We are seeking an Executive Chef to lead the culinary program at GITANO NYC. This is a
leadership position requiring equal parts creative vision and operational discipline. The Executive
Chef owns the kitchen — from menu development and team culture to cost control and service
execution — and partners closely with the GM and ownership to define and elevate GITANO's food
offering.

Key Responsibilities

Culinary Direction
● Develop and execute seasonal menus that reflect GITANO's modern Mexican identity
● Source high-quality, seasonal ingredients in partnership with approved vendors
● Maintain consistency of flavor, presentation, and portion across all services
● Lead R and D for new dishes, specials, and event menus in collaboration with ownership and
the GM

Kitchen Operations
● Oversee all BOH operations for daily service, private events, and Club Bohemia
programming
● Build and maintain prep schedules, line assignments, and service pacing
● Ensure kitchen systems, cleanliness, and equipment meet DOH and company standards at
all times
● Lead pre-shift meetings and daily kitchen briefings

Team Leadership
● Hire, train, and develop a high-performing kitchen team
● Set performance expectations; conduct regular reviews and provide ongoing coaching
● Build a kitchen culture grounded in craft, respect, and accountability
● Manage scheduling and labor in line with revenue and business needs

Financial Management
● Own food cost targets — to be defined with ownership prior to start
● Conduct weekly inventory counts and reconcile variance
● Manage vendor relationships; review invoices and flag discrepancies to the GM
● Minimize waste through disciplined prep planning and yield management

Compliance and Safety
● Maintain current NYC Food Handler Certification; ensure all kitchen staff are certified
● Enforce HACCP protocols, allergen controls, and cross-contamination procedures
● Ensure kitchen passes all internal and external health inspections
