About the Role
93 Octane Brewery - Elmhurst is seeking a hands-on, energetic, and detail-oriented Back of the House/ Kitchen Manager/ Chef to lead our back-of-house operations. You will oversee daily kitchen workflows, maintain rigorous food safety standards, and manage inventory to drive both quality and profitability. The ideal candidate balances team leadership with strong operational execution.
Key Responsibilities
- Supervision: Manage, train, and mentor line cooks, prep cooks, and dishwashing staff.
- Operations: Coordinate daily food preparation, cooking, plating, and line efficiency.
- Inventory & Ordering: Monitor stock levels, handle vendor orders, receive deliveries, and minimize food waste.
- Cost Control: Track food and labor costs, enforce portion control, and optimize operational budgets.
- Safety & Sanitation: Ensure full compliance with health department regulations, ServSafe standards, and kitchen cleanliness.
- Scheduling: Build weekly staff schedules that align with labor targets and business volume.
Qualifications
- Experience: 3+ years of kitchen leadership in a fast-paced commercial kitchen.
- Skills: Strong organizational, communication, and problem-solving abilities under pressure.
- Certifications: Active food safety certification (such as ServSafe Food Manager Certification) preferred or able to pass the course.
- Physical Requirements: Ability to stand for long shifts and lift up to 50 lbs.
