About this position
ALTBAU is a new bakery, cafe, and community space in Williamsburg, Brooklyn, led by Chad Robertson, founder of Tartine Bakery, opening in Fall 2026. We're looking for ambitious, motivated bread bakers to join our opening team.
You'll work across naturally leavened breads and other hearth-baked products, with an emphasis on regeneratively grown grain, freshly milled regional flour, and carefully sourced ingredients, regionally and beyond.

What You'll Do
- Produce ALTBAU’s breads following our recipes, quality standards, and production schedules.
- Scale and mix batches of up to 90 kilograms of dough, with attention to dough development, temperature, hydration, and consistency.
- Ferment, divide, pre-shape, and shape a range of naturally leavened breads, including high-hydration doughs.
- Proof, score, and bake breads with consistency and attention to detail.
- Mill flour in-house using our stone mill as part of our bread production process.
- Run your assigned station efficiently, with strong organization, timing, and awareness of the overall production schedule.
- Keep the bakery clean, organized, and sanitary, following food safety procedures, proper storage, portioning standards, and FIFO.
- Work closely with the bread and broader kitchen team to complete daily production accurately and on time.
- Help maintain product quality, reduce waste, and build a positive, supportive kitchen.
What We're Looking For
- 1–2 years of professional bread baking, bakery, or culinary experience.
- Working knowledge of bread production, including mixing, fermentation, dividing, shaping, proofing, scoring, and baking.
- Experience working with naturally leavened and high-hydration doughs is strongly preferred.
- Familiarity with grains, flour, fermentation, and professional bakery equipment; experience with stone milling is a plus but not required.
- Ability to work efficiently in a fast-paced production environment without losing attention to detail.
- Ability to stand and walk for long periods and lift up to 50 lbs.
- Availability for early mornings, weekends, and holidays.

This is the expected hourly range for the position. Final pay is based on experience and other job-related factors.
